Margarine -v- butter
It used to be said that margarine was lower in fat and therefore in calories than Butter – not true
You can still save calories in your baking if you use the low fat options in food preparation. Most manufactures now produce low fat (and therefore low calorie) margarines that can be used in almost any recipe – the pack will inform you if the particular margarine you have chosen is not suitable for your particular recipe. I always use low fat margarine for all my baking. Just a few facts – margarine or butter has an average of 200 calories per oz (about two tablespoons), whereas the low fat variety are more like 100 calories per oz. So quite a saving!
You will find that the taste is just as good, but you can save approximately half the calories on the margarine alone.
Low calorie sugar substitute
Another good way to cut down the calories when you are baking. You need to use just a small amount of the product in your recipe and the food tastes just as good as if you use standard sugar. It is best used to replace granulated sugars, or castor sugar, and it is not successful with when used in place of Icing sugar. The low calorie sugar is also available as a liquid sweetener. You can of course use this product in either form to sweeten your drinks. You can also purchase sweeteners which are small tablets that are popped into your drink. Several manufacturers have their own version of these. You will find that if you have two spoons of sugar in your tea or coffee, the calories you will save by changing to sweeteners or low calorie sugar, will be quite substantial.

Other low fat substitutes
Use low fat spreading cheese in recipes that ask for soft cheese – you will not taste any difference at all.

Natural yoghurt can often be used as a substitute for cream in recipes. Greek yoghurt can also be used as a substitute for cream or as a salad dressing or dip – you could have it with fresh fruit and with cereal – natural yoghurt of any type is a versatile and low calorie food.

If you like tinned tuna, make sure you pick the tuna that is in brine and drain it well before serving.

Try low fat custard powder and low fat jellies. Go for fruit in natural juices, rather than the fruit which is canned in syrup.

Try this very simple idea for a satisfying low calorie trifle:-

Drain tin of fruit in natural juices and place in bottom of a glass serving dish
Mix the low fat jelly as per instructions and when cooled down slightly, pour over the fruit
Make the low fat custard as instructed and pour over the set jelly.

A low calorie, fast pudding!!

Nowadays there are low calorie or low fat substitutes for many products, although if you are actually calorie counting, you do need to check the labels on products that use sugar substitute as if these still contain fat, the calorie count will not be as low as you may imagine.

General Tips
When cooking minced beef or lamb, try and cook the meat in a non stick pan using as little fat as possible, then leave it to cool. You will be surprised at how much fat is now sitting on the top, just skim this off and you will have saved quite a few calories.
When making sandwiches use low fat margarine or better still don't use any at all. You can easily put a small amount of low Calorie Mayonaisse onto the bread if you really want it covered. If you use soft fillings you really don't need to add anything at all.
